Summers are best with a big bowl of chilled watermelon. and some real fresh watermelon mocktails are always a favorite. But in the process, we have trash full of the heavy fleshy peels. At first sight, they look
such a bulk of the waste. But not anymore, we can do so much with the fleshy juicy flesh. The white flesh is discarded as it has barely any flavors. How about if you can use the fruit and enjoy the peel too!!

Watermelon peel pickle is one such recipe, and I can see
many fans in my family and extended family. My friends ask for jars full of the pickle to be added to a bowl of salad. My daughter ” Si “loves the
crunchy bits in her tacos. “SM “loves to pop them along with his dinner as
it just gives that bite of freshness.

And one can see me in all the above as I generally like it
with almost anything.

Instructions
  1. Take a sterilised ceramic jar or glass jar to add all the ingredients.
  2. Cover the jar tightly and allow to stand for a day if u like crunchy.
  3. Allow standing for longer if u like a sour soft pickle.
Recipe Notes

The ginger and chilies lend a beautiful flavour to the pickle. These are optional.

One can add carrots or onions also to the pickle.

The pickle stays crunchy till about ten days.

It tastes really really refreshing when refrigerated.

The pickle is a great addition to salads.
