Ultimate Pineapple Thai Summer Mocktail/ Pineapple Lemongrass and Basil Mocktail

Pineapple Thai cooler is one recipe which is like a daring attempt to bring Thai flavours to the classic PinaColada as I wanted to omit the Coconut milk. I somehow had never liked Pina Colada, despite a great fan of coconut flavours. Somehow it never worked for me.

Eating a pineapple by itself is a bit risky for me as I develop a sour throat, So a pineapple drink is a welcome way for a pineapple fan like me. A strange thing is that while we lived in Chennai a few years ago, the pineapple available there never gave me a sour throat and I completely enjoyed my pineapple days there.

The sweetness of Pineapple has some magic about it. And during the days when I had all flavours on my mind is when this recipe was conceived. So some basil from the terrace garden and the blooming Lemongrass stalks, thanks to the recent Monsoon showers, I had all that is required in hand.

Pineapple, Basil, Lemon grass

The beauty of the recipe is the lemongrass syrup I made for this recipe came handy as a great add-on to my Mojito and other cocktails in a party soon after I shot this recipe. I love when U end up with a surprise element during the conception of something.  It just comes as a bonus. So here the great recipe to Pineapple Thai cooler brings us a Lemon Grass syrup as a bonus.

You can try adding coconut milk to the recipe of Pineapple Drink,  if you are a Pina colada fan, I am sure it will add a different dimension to it.

Pineapple Thai Mocktail
Pineapple Thai Mocktail Is a combination Of Thai flavours from Basil And Lemon Grass with the refreshing pineapple juice.

Lemon Grass Syrup
Instructions
  1. Blend the pineapple chunks with a handful of basil leaves. Allow The flavours of basil to build in the juice for some time. while you finish other tasks at hand.
  2. Strain through a not so fine sieve to remove excess rough fiber and leaves.
  3. Now add Lemon juice and lemongrass syrup as per the taste.
  4. Arrange the glasses with ice cubes and the garnish. Pour the juice and top it up with sparkling water if desired.
Lemon Grass syrup
  1. Clean and chop the lemon Grass Stalk.
  2. Place sugar and water in a pan and as soon it gets warm add lemon grass stalks
  3. Simmer it for 5-6 minutes.
  4. Allow to steep till cooled.
  5. Strain and reserve.
Recipe Notes

I like my basil lemongrass flavours to be intense so I use a bit extra of these than said.

Adjust the sugar levels if using Sparkling water to top.

Do not use lemon juice if the pineapple is sour. Or add extra sugar to balance flavours.
