Gajar Gobhi Shalgam is like a must in Punjabi households through the winters. Its a Khatta Meetha ( sweet and sour pickle made of sundried veggies and Jaggery along with some spices. My recipe is inspired by my Punjabi friends’ mom’s recipe, and I do not use Vinegar, unlike the Traditional Punjabi Pickles. Instead, the sourness is derived from the Mustard seeds.
I am sure many of us would find it a hard to resist that heaps ful of this pickle by the side of their plate of rice or on the hot parantha, and sometimes to be a substitute to the Veggies otherwise.
