These Shiny large red chilies are there around precisely for a month in the North of India. I remember Nani, carefully cleaning piles of these and then mixing the masala in large vessels, and then swiftly slitting through them and filling them. I just found it so magical. and wish I could capture this then. But I relive these moments each winter when I make this pickle. As the pickle is fresh, the crisp skin of the chilies has a crunch that has a different admirer in many of us, and my dad likes the mature softer soaked version, so he always saves a batch from past winters to be eaten later in summers.
I am sure the fragrance of fresh spices, fennel, and fenugreek, would not let u keep it for long, and it will vanish in no time.
